Cattle and their byproducts are some of Idaho’s biggest agricultural exports, so we’ve naturally got both the meat and the potatoes covered here. But in Boise, the food is getting greener with every season. More vegan eateries are popping up, and more restaurants are expanding their menus.

For example, Alchemist Plant Pub is a vegan venture that opened in mid-March on Idaho Street, next to Western Proper. I haven’t made it down yet but their food looks great — if you have been, what did you think?

Alchemist Plant Pub joins a short but growing list of completely plant based restaurants, the first of which was High Note Cafe, followed by Oh Vegan Soul, which was first a food truck, but now operates out of the Chow Public Market. If I’m missing any others, let me know!
