We demand a lot of breakfast sandwiches: They need to be flavorful, not too dry but not too saucy, hopefully portable, and have an identity or say something about where they’re from. We’ve tackled breakfast burritos in the past, but in my opinion Boise’s breakfast sandwiches are generally better than our burritos.
So without further ado, here are the breakfast sandwiches from local Boise restaurants that you need to try this year.
1. Certified Kitchen’s Signature Egg Sandwich
This was a resounding favorite among Hey Boise readers, and for good reason. The sandwich is built on a possibly perfect sourdough English muffin, with egg, arugula, white cheddar, and a fresno crème fraiche. I recommend adding bacon, avocado, and tomato, and you have a to-go sandwich sure to improve your day so much it was my first recommendation on City Cast Boise’s recent breakfast episode.
There’s only one con about this sandwich, which is that it can lean a little greasy for some folks at first bite. But it really isn’t too greasy as a whole, although you can take out the crème fraiche or ask for the English muffin unbuttered if you need.

2. I Am a Prince, I’ll Have It All from Goldstein’s Bagels
So many Hey Boise readers named this sandwich in particular that I had to bump it up a spot in my rankings. The Prince is a meat-lover's affair, with egg, bacon and sausage, cheddar cheese, and SPK (salt, pepper, and ketchup). It really is divine, and for some reason makes me think it’s an ideal sandwich at the start of a road trip — or maybe just your workday.
Another Goldstein’s option is the simple Egg & Cheese, to which I like adding their breakfast sausage, arugula, and tomato.
3. The Rizo at Good Times Bagels
If you have a liquor-infused headache, this sandwich will kick you back to life. I’m mystified that no one listed it as one of their favorites, but I’ll hang my hat on it.
Good Times’ bagels are wood-fired and crustier than they are soft (in a good way). That toastiness pairs with chorizo, egg, jack cheese, arugula (noticing a theme here), and zhug, a mild Yemeni cilantro-based hot sauce. And if you like, add more hot sauce!
