Some of you (but not enough, I say!) recognized this food from Oh Vegan Soul.

Oh Vegan Soul, founded and run by chef Mae Gaines
, is at the center of an unexpected Venn diagram for Boise. Gaines makes some of Boise’s best soul food, and some of Boise’s best vegan food, all rolled into one menu.

The collard greens and macaroni and cheese are super savory, and you wouldn't be able to tell either were vegan if you had to. (Blake Hunter / City Cast Boise)

After running Oh Vegan Soul as a food truck for several years, she set up shop in the Chow Public Market at the Boise Spectrum Theater on Overland Road last year.

Boise’s vegan scene
could always expand more, but I strongly recommend Oh Vegan Soul to the most avid meat-eaters, too. The best way to stay up-to-date is via Instagram, where she posts updates about open hours, and also promotes specials like Monday’s pecan pie, in honor of Martin Luther King Jr.
