It’s true that access to vegan and vegetarian food on restaurant menus has increased in recent years, even in Idaho. But are more people actually eating vegan and vegetarian?
Some research suggests that the number of people eating plant-based diets in the U.S. has remained mostly stagnant for the last two decades. As Boise State Public Radio reports, however, people looking to curb their personal climate footprint often start with their diets — and in the meat-obsessed U.S., that can make a big difference.
🍕 Lulu’s On Apple Reopens
The Lulu’s Pizza & Sushi on Apple Street reopened this week after being closed for a few months. Lulu’s is a North End classic, and expanded to Apple Street in 2021. After serving pizza and sushi, the new general manager and co-owner dropped sushi from the menu, which he says both he and his customers are grateful for.
✈️ New Food, Drinks Wanted at BOI
In addition to changing parking prices, the Boise Airport has also released an official request for proposals for new concessions. The business at the airport are only reviewed once a decade, and leases are up next August.
In particular, they’re on the lookout for food and beverage options instead of retail stores.
🥖 Great Harvest Owners Looking to Sell
Great Harvest owners Heather and Zane Colby are stepping away from their location on Fairview Avenue after seven years, BoiseDev reported. The bakery has over 200 franchisees, including at locations in Eagle and Meridian, but the Colby’s don’t have a buyer yet.
